Super Bowl = Super Food!; Part 2

Well I have to agree with my mom…there are a lot of reasons besides watching football to get together for the Super Bowl.  I do like football, but I prefer college over NFL so I really don’t have a team to root for.  I love to cook and entertain and can’t wait to have a  place big enough to have more get togethers!

I decided to try out some hearty recipes for entertaining as well.  My menu includes:

GW’s Deer Chili
Black Bean Salsa
Sausage Stars
(not in the cook book)

I am thankful for guy friends who like to hunt otherwise I’m not sure where I would find deer meat!

 

Yumminess cooking

GW’s Deer Chili

1 lb. ground venison
1 link venison sausage

olive oil
1/2 tsp. ground cumin
2 tbsp. chili powder
1 tsp. salt
1/2 tsp cayenne pepper
1 c. chopped onion
2 jalapenos , minced
1/2 c chopped red and green bell peppers
1 c. smashed tomatoes (or diced)
chopped cilantro
2 tsp. chopped garlic
1 can kidney beans
1 can pinto beans
4 c chicken stock

Heat the oil in a large heavy pan over medium/high heat.  Add the ground venison and brown. Add chili powder, cumin, salt and cayenne pepper.  Break up the meat.  When meat is browned and seasonings well mixed, add the onions, bell peppers and cook until vegetables are soft.  Add the tomatoes, cilantro, jalapenos and garlic.  Cool for 5 minutes.  Stir in remaining ingredients.  Bring the mixture to a boil, turn heat to low and simmer.  Cook uncovered until the mixture begins to thicken, approximately 45 minutes .

I only had the ground venison and that was enough meat…I also added alot of extra cayenne pepper (my mom told you we love cayenne!) so it was spicy!

Mmmm Mmmm, Good and I’m Not Talking Campbell’s

Winter is definitely here and there is nothing like a bowl of hot homemade soup to warm the soul.  I know, your probably thinking, “My man doesn’t think soup is a meal.”  Well, he won’t even realize that he is eating soup unless you tell him!  This is a hearty bowl of  beef and potatoes you’ll find so easy to make it will be on your list of go to recipes.  My man, the one who doesn’t eat leftovers , even had this for lunch the day after I fixed it for dinner!  So, lets get cookin’.

Cowboy Tortilla Soup

1 lb Ground Beef, browned and drained
3 Cups Water
1 box Au Gratin Potato Mix (used dry)
2 Cups milk
1 Cup Salsa (any kind)
1 (16 oz.) can Ranch Style Beans (I used the ones with jalapenos)
2 Cups Velveeta Processed Cheese
1 (12 oz.) can tomatoes and green chilies (optional)

Combine browned ground beef, dry potatoes and water in soup pot on stove.  Cook on medium until potatoes are tender.  Add milk, salsa, beans, dry potato mix and cheese.  Heat on low until cheese is melted.  Add tomatoes and green chilies (Rotel).  Cook on low until thoroughly heated.  Serve with crushed tortilla chips, a dollop of sour cream and cheese on top.

I used skim milk, because that is all I ever buy and I would recommend rinsing the Ranch Style Beans to remove the “grease” from them if you are trying to eat healthier.
